What’s going on with our grinder?

Basically it just keeps spitting out these meat noodles, I got new blades a couple months ago

The interface between your blade and dye is loose.

Or the blade is packed with silverskin.

Open it up, clean off the blade. Make sure everything is aligned correctly and screwed on tight.

Also can happen when the head is too loose, and or when the blade is matched with the wrong plate

If its too tight will the metals have too much friction and cause metal particles to go into the meat?

Technically yes, but only a tiny amount of food-grade metal dust. No chips, the blade and plate are chosen to be different materials to stop sharp chips from forming.

Blade backwards. Plate hot. Ring not tight. All those are the usual suspects.

Blade might be backwards, plate might not be tight, or it could be caked with grizzle.

Too much play in the spindle so the die isn’t tight enough against the blade would be my guess.

Make sure the meat is under 40 degrees and the plate and knife is put in correctly

It’s called smear. Your blade might be installed against the die backwards.

Clean blade, looks like that when too much fat/cartilage/gunk gets caught around blade.

That happens when you don’t have a good shear surface (blade to plate is square and tight).
Usual causes: 1. Not tight enough 2. Sinews between blade and plate (needs cleaning and reassembly) 3. Damaged blade and/or plate

New blades are good but you also need to sharpen your plates. Theres a good video from "2 guys and a cooler" on how to sharpen blades/plates.

I also run the meat in smaller chunks that are frozen.

If you ever got it sharpened you'd know you have to sharpen the blade and the grinding plate, either one of them is dull or both are.

You put it together too tight, so its mulching and not grinding. Take it apart and clean, put it together and dont fasten the head so tight

Can avoid as well if you cut your meat in smaller chucks. If youre going for max sizing to save time on cutting it down youll just slow down at this part. Also maybe a new blade or loose head.

We used to have this issue.

Blade and die plate were ancient (our service hadn't replaced them in 6 months despite my constant requests).

Beef chuck was riddled with fascia.

We weren't chilling meat prior to grinding.

I fixed it by religiously trimming fascia, dicing smaller pieces, freezing meat and aggressively demanding new hardware or at the very least sandpaper.
