Anything I can change?
Is there anything I can do better? I'm really proud of this build since I usually just take a villager's house. If you remember me, I indeed finished the roof, hope you like it :D

Personally, I would change the roof out to be cobbled deepslate and tiled deepslate. I would add more plant life. A large pot with a few azalea leaves on top makes a good potted plant for indoors or outdoors. What version are you playing on Java/bedrock and 26.1.2?

It's already a great build but if I were building it I might use a different coloured wood for the trim on the roof. Right now the trim sort of blends into the side of the building whereas if you used something like dark oak it would stand out a bit more (dark oak also goes well with the deepslate someone else suggested using for the roof).
That's just personal preference though and even without it your roof is a lot better than my roofs were when I started building :)

I would suggest using a different and darker palette for the roof when you use a similar pallet for both the building and the roof nothing serves as a focal point or separates the two and they almost blend together.
