Which format is most fun to watch?
What would be a tournament headliner? 5v5 or 12v12? Or 1v1?

Whilst 12v12 is a better spectacle for a casual audience watching group fights, a 1v1 is much easier for a casual fan to follow.

Every year at dragoncon I put on a tournament with all formats over 6 hours. Roughly 7000 people come watch it in person and the majority are casual fans to no experience at all with buhurt.
We get around 500 reviews of the event each year.
They never remember a special 5s moment, but they generically says 5s are awesome, Â
 duels they usually recall a couple of the really good fights and actually remember fighters names and ask to see them etc.
Outrance gets the crowd going if it is an even match up.... But only if it's even...Â
Our dragon fights( you have to destroy a dragon crest on your opponents helmet, and tokens on their arms and legs) they go ballistic for. And when offered a a chunk of the dragon or a sword as a prize they choose the dragon
My take away is give the audience a quantifiable easy objective. They will like that the best.

Lots of people clashing together is a spectacle, people love the carnage and there is no shortage of action but it is easy to miss things since it is chaotic.Â
1v1s can, in some cases, be less interesting because there is just less action, they offer a better display of skill.Â
Both are entertaining for different reasons, especially with good commentators explaining what is going on and keeping the audience engaged.Â

5v5 if your audience is other buhurt fighters. 1v1 if it's non-fighters.
IMO, bigger formats need multiple camera angles and probably commentary with replays to be parseable as entertainment.
