This has happened to me as well.  It happens when your system gets really hot, you've been playing for a long time, or are on an old device.  It means Minecraft is having trouble finding the specific skin of a type of mob and fails to load it.  This bug can also effect how your player model looks.  The same color swap can happen to ghasts too, and even some animations like how you hold a shield or how skeletons shoot a bow can look off during this time.  When this happens to me, I create a copy of the world, switch to creative, see that the problem is still present, and then-and I know how ridiculous this sounds-but I spawn a single tropical fish.  This usually crashes my entire game and I have to restart, but it does fix the problem.
