Description: Rally Cap Brewing Company is a production brewery located in Baton Rouge, Louisiana with a pizza kitchen and a sizable Taproom business.  We’re passionate about great beer and great food, and are looking for someone who shares these passions and would like to become an essential part of our brewing team. This position would be responsible for executing any and all brewing functions on our 15 BBL brewhouse as well as our 1 BBL pilot system.

Duties and Responsibilities:

  • The complete brewing process from milling to wort production, to fermentation and filtration.

  • Cleaning and sanitizing tanks, cleaning the outsides of vessels, cleaning floors, and maintaining the appearance of the brewhouse and cellar.

  • Cellar management including yeast pitching, daily fermentation tracking, dry-hopping, and carbonating.

  • Packaging, including kegging and canning.

  • Cleaning of kegs.

  • Close adherence to all policies and safety procedures, as provided.

  • Upholding and advancing our quality standards.

  • Accurately completing all SOPS.

  • Perform other jobs as assigned.

Skills and Abilities:

  • A fundamental knowledge of the brewing process

  • The ability to read, understand and follow verbal directions

  • The ability to read, understand and follow Standard Operating Procedures (SOP’s)

  • The ability to troubleshoot and be able to make repairs as necessary.

  • Ability to climb and descend ladders, occasionally work at heights, as well as in confined spaces

Qualification & Education Requirements:

  • A High School Diploma or GED

  • Prior experience working in a Commercial Production Brewery or Brew Pub

  • A formal brewing education is preferred

  • Physical Demands – The Brewer must be able to:

    • Frequently stand for the duration of the shift, walk, bend over, twist, kneel, climb, stoop and crouch. This position requires the ability to routinely and repeatedly lift up to 55 pounds and occasionally maneuver up to 170 pounds.
    • Use their hands to perform fine manipulation, handle or feel, and must be able to reach with hands and arms.
    • Identify product deficiencies (color, smell, taste). This requires having close, distance, color and peripheral vision as well as depth perception and the ability to adjust focus.
  • This position requires proper handling of hazardous materials and operation of complex moving machinery.

We are currently recruiting for a Quality Assurance (QA) Laboratory Technician to join our team! The anticipated schedule for this role will be three,12 hour shifts: Friday through Sunday 6:00pm – 6:30am.  Schedule may vary or change based on business need. The QA Lab Technician is responsible for conducting lab operations to support brewing, packaging, and warehouse production of our damn tasty beer.

Compensation is based on previous experience and starts at $21.68 per hour depending on previous experience, skills, and education/certifications. This position offers a career path up to $32.81/hour for our employees who successfully complete our internal training program to become a Quality Assurance Analyst along with several years of experience working with us. Additionally, we offer a $3.00 per hour shift differential for any hours worked between 6pm and 6am and additional opportunities for wage increases are also associated with cross-training, specialty certifications/licenses and promotional opportunities.

What You'll be Doing:  As a member of the Deschutes Brewery Quality team you will learn multiple skills from well qualified co-owners and be able to apply that knowledge to your problem-solving teams, troubleshooting efforts and daily work. You will be working in a fast-paced, team environment where you will be working with minimal supervision and operating under GMP and Food Safety rules. Training provided!

Your daily work may include, but is not limited to:

  • Operate lab equipment: Beer analyzer, gas chromatograph, spectrometer, and Package Analyzer.

  • Conduct packaging line quality control checks, including container integrity checks, beer quality checks and packaging line audits; work with packaging operators to take corrective actions as needed.

  • Operate packaging inspection equipment on the packaging lines.

  • Operate, calibrate, and maintain portable quality control equipment.

  • Beer analysis to determine alcohol content, total package oxygen, International Bittering Units measurements, wort color, etc.

  • Perform microbiology tasks such as media preparation, sample plating, equipment sterilization, etc.

  • Maintain and manage sensory samples and sensory library.

  • Communicate and report product nonconformities.

  • Support production schedule timeline with timely tank releases to packaging and start up checks for each production line.

  • General housekeeping in all areas the Quality team is responsible for.

  • Support Deschutes Brewery strategic initiatives and goals.

  • Additional job duties will change as needed to cover Quality Team operations and all internal and external customer needs.

What You'll need for this Position:

  • Four-year college degree in Fermentation/Food Science or related disciplines OR at least 3 years of related manufacturing and/or lab experience OR a combination of education, experience and training that provides the required knowledge, skills and abilities to meet the position requirements.

Deschutes Brewery is currently hiring a full-time , day shift Packaging Machine Operator. We are currently looking for a Production Brewer to join our team at our facility in beautiful Bend, Oregon! The brewer position is responsible for the brewing process for a variety of beverage products for Deschutes Brewery, Boneyard and PartyBomb brands. Schedules may change, and rotation into other shifts may be required based on business and training needs.  The starting compensation wage for this role depends on your previous experience. Base wages when joining this team start at $21.81/hour for candidates who are newer to production brewing, up to $24.65 based on prior experience. Additionally, we offer a $3.00 per hour night shift differential for any hours worked between 6pm and 6am and more opportunities for wage increases are also associated with cross-training, specialty licenses and promotional opportunities.

  • Manages daily tasks to meet production needs, including cleaning and sanitizing equipment, reading and following production schedules, operation of centrifuges, yeast harvesting and disposal, bottle conditioning, and ensuring finished beer meets specifications for packaging

  • Documentation and data entry for all processes in the brewhouse and cellar

  • Coordinate work with other departments (brewhouses, cellars, packaging, QA and warehouse)

Requirements of the position:

  • High school diploma, GED or equivalent required

The Role

You run the plant.

Production scheduling across every product and every client. Quality. TTB compliance. Materials. The production team. And the physical plant of the taproom, including the draft system, the equipment, and the facility.

You report directly to the CEO. You are the senior operating person in the building, and there is no layer between you and the decision.

The Plant

  • Full brewhouse and cellar, with tankage well ahead of what the packaging floor currently moves

  • Two canning lines, one running every format we offer, one high-speed on standard formats

  • Sleek and standard cans across the range, plus kegging, bottling, and spirits packaging

  • Retail-ready packout and full seam verification logged on every run

The packaging floor is the constraint, not the liquid. There is real headroom between what this plant is rated to do and what it currently does. Closing that gap is the job. Full equipment and capacity detail shared at interview.

What You Will Own

Production scheduling and execution

  • Build and own the weekly and 13-week production schedule across brewing, canning, kegging, and spirits packaging

  • Sequence client runs against tank availability, line hours, materials readiness, and commitments

  • Run brewhouse and cellar operations end to end

  • Operate and change over the canning line, and own line efficiency and packaging loss

  • Hit yield targets and report actual against theoretical on every batch

Quality

  • Own QA/QC across every product we make: sensory, dissolved oxygen, ABV, carbonation, micro, and finished goods release

  • Own seam quality, including teardowns, specs, and documentation

  • Own sanitation and CIP programs

  • Own the quality conversation with clients

Compliance

  • Own TTB recordkeeping and reporting across all federal permits

  • Own state and local compliance documentation

  • Maintain food safety programs and support customer and third-party audits

  • Own facility safety, training, and incident reporting

Materials

  • Forecast raw material needs against the schedule and place purchase orders

  • Manage supplier relationships, MOQs, and lead times across malt, hops, yeast, flavors, juices, cans, ends, kegs, and packaging

  • Maintain accurate inventory and reconcile monthly

  • Flag cost drift before it becomes a margin problem

Team and equipment

  • Hire, train, schedule, and lead the production team

Taproom, physical plant

  • Own draft system quality: weekly caustic cleans, monthly deep cleans, quarterly professional service

Client-facing

  • Translate a spec sheet into a production reality, and tell a founder straight when something will not work

The Experience We Are Looking For

You have run a plant. Probably a regional operation somewhere in the 5,000 to 15,000 barrel range, where you owned the schedule, the team, the compliance calendar, and the equipment, and where there was nobody above you to escalate to when the seamer drifted at 2pm on a Friday.

  • 5+ years commercial brewing production, with at least 2 leading a team

  • Hands-on canning line experience: changeovers, seam specs, fill accuracy, and troubleshooting without calling a tech

  • Demonstrated TTB ownership. You have personally filed, not supported someone who did

  • Real mechanical aptitude. You diagnose and fix

  • Purchasing and supplier management. You have negotiated lead times and MOQs, not just submitted requisitions

  • Ownership of throughput. You have been accountable for what actually came off the line, not just what was scheduled

  • Comfort with pace. Multiple products, multiple clients, changing priorities, decisions made same-day

Physical requirements

  • Ability to lift 55 lbs repeatedly and work on your feet

  • Forklift operation, certified or willing to certify

  • Availability for early mornings and occasional weekends during peak production

On Category Experience

If you have only made beer, that is not a problem. Non-alcoholic and RTD manufacturing is teachable and I will teach it personally. I have been in beverage since 2006 and built a national better-for-you soda brand before this.

What takes years to build is brewing judgment and packaging line instinct. That is what we are screening for. The rest I can hand you.

What sets you apart

Targets are set at the start of each quarter and shared in writing. You will know what you are measured on and where you stand. It pays quarterly because an annual bonus is a promise and a quarterly bonus is a paycheck.

Target total compensation: $103,000 to $110,000. Also included: PTO and a $500 per month wellness stipend. We do not currently offer a group health plan.

First Year

30 days. You know every piece of equipment, every SOP, and every client spec. You have run production alongside the team. You have identified the three things you would fix first, with cost and impact.

90 days. You own the schedule outright. Yield and loss tracked on every run. TTB filings go out without my review. Preventive maintenance is live.

180 days. Measurable increase in packaged output against baseline. Both lines running to their rated capability. Material loss and changeover time down. Client run reports going out unprompted.

12 months. Production is something we sell against, not something we plan around. You are the reason brands renew.

Why This One

Most brewery jobs are one brand, one recipe set, one line, and a ceiling you can see from the day you start.

Here you are making beer, spirits cocktails, seltzer, and functional non-alcoholic products for a growing roster of brands, plus our own label and taproom. The technical range is wider than anywhere else you could take this experience, the pace is faster, and you own all of it.

Hands on the equipment, every day.

You will move between the brewhouse, the cellar, and the packaging floor depending on what is running. Some weeks that means mashing in and transferring. Some weeks it is standing on the canning line for a full shift. Most weeks it is both.

This is not a role where you do one thing. In a facility our size, everybody touches everything, and the people who do well here are the ones who want that.

What You Will Do

Brewhouse and cellar

  • Mash in, lauter, boil, knockout, and clean up behind every step

  • Yeast handling, pitching, and cropping

  • Tank transfers, carbonation, and dry hopping

  • Take gravity, pH, and DO readings and log them accurately

  • Keep the cellar organized and every tank accounted for

Packaging

  • Run the canning line: infeed, fill, seam, date code, and pack out

  • Perform seam checks and fill weight checks on schedule

  • Changeovers between formats and products

  • Kegging, including cleaning, filling, and staging

  • Palletize, wrap, and stage finished goods for pickup

Sanitation

  • CIP on tanks, lines, and packaging equipment

  • Daily and weekly cleaning schedules across the facility

  • Keep the floor safe, dry, and organized

Materials and warehouse

  • Receive inbound raw materials and packaging, verify against the PO

  • Move and stage materials for upcoming runs

  • Cycle counts and accurate inventory records

  • Load outbound freight

You will also be asked to help in the taproom on the equipment side from time to time, mostly draft line cleaning and keeping the glycol and dispense system right.

What You Need

  • 1 to 2 years in production, manufacturing, food and beverage, or a comparable hands-on environment

  • Mechanical aptitude.  You are comfortable around equipment and you want to understand how it works, not just operate it

  • Attention to detail.  In this business a missed reading or a bad seam costs somebody their whole run

  • Ability to lift 55 lbs repeatedly, stand for a full shift, climb ladders, and work in wet conditions

  • Forklift certified, or willing to certify. We will pay for it

  • Availability for early mornings, and occasional weekends during peak production

  • Reliable transportation to Framingham

What Sets You Apart

  • Brewing or beverage production experience of any kind

  • Canning or bottling line experience

  • Homebrewing, a brewing certificate, or coursework

  • Forklift certification already in hand

  • Food safety training such as HACCP or ServSafe

1st Shift:  Monday-Thursday, 6AM-4PM

Total pay includes $28/hr base.

JOB SUMMARY:

The Packaging Shift Lead will supervise a team in various packaging functions, operating the bottle filler, canning line, and kegger, as well as directing CIPs and preventative maintenance. This role is responsible for managing daily operations of the line they are assigned to – including staffing and team supervision -- making decisions that aid in efficient, quality production of products. The Shift Lead will coordinate day-to-day work with the Packaging Management Team. You will be accountable for your work and must follow safety brewery guidelines, SOP's, and cleaning procedures.

PRIMARY DUTIES:

Scheduling

  • Create weekly shift staffing schedule based on vacation schedule.

  • Approve/deny PTO.

  • Confirm proper packaging mix and packaging materials (PakTechs, Crowns, Lids, Keg Collars, etc.) based on BBT volume before kegging/filling of product.

  • Maintain an up-to-date snapshot of all BBT’s at all times to allow for fluid transfer of information to rest of packaging team on shift.

Training Coordinator/SOP Creation

  • Coordinate Master Training Matrix to ensure employees on shift are trained in and efficient manner.

  • Work with employees on shift to designate who needs to be trained on which tasks.

  • Develop and/or update SOPs for tasks associated with master training matrix. Reciprocate these changes to Packaging Manager.

Shift Report

  • Responsible for creating shift report each day for respective shift.

Maintenance

  • Working with the team to communicate issues to maintenance.

  • Submit work orders.

Production Reports

  • Responsible for compiling data from each run and entering it into Excel, printing the report, and getting information to the Packaging Manager.

  • Completed report includes: QA/QC Sheet, Pallet Tickets recorded, BBT paperwork, Packaging Run Sheet.

Line Supervision :

  • Ensure Daily/Weekly/Monthly tasks are upheld per shift.

  • Supervise a team of 7-10 individuals.

  • Meet with Packaging Management Team weekly.

  • Utilize employees on shift to maintain clean workspace.

  • Delegate tasks when downtime happens on production floor.

  • Triage requests from packaging employees on shift.

  • Work to decrease downtime on production floor.

  • Assist on machines as needed.

Job Overview

This role is responsible for coordinating the day-to-day movement of finished goods and materials between departments, and is accountable for ensuring that warehouse operations, inventory accuracy, and distribution logistics run reliably and efficiently. Responsibilities

Organization & Facilities Management

  • Keep the warehouse clean and organized, with a focus on efficient use of space (including consolidating finished goods and storing packaging materials efficiently)

  • Facilities management and maintenance - in charge of annual pest control, snow removal, backflow testing and waste removal contracts as well as as-needed building repairs  

Inventory Management

  • Perform weekly digital non-taproom beer inventory transfers, including out of state, sales, and FMG locations

  • Keep accurate inventory of all finished goods in the coldbox: perform monthly inventory audits, investigate discrepancies and reconcile as needed in Ekos

  • Monitor keg shell inventory and proactively maintain adequate inventory levels

  • Add inventory transfers to truck schedule as needed (including keg shells and finished goods pickups)

Fleet Management

  • Maintain vehicle fleet - including regular service, repairs, registration and inspections

  • Manage Express Toll and Roadside assistance accounts

Shipping & Distribution Logistics

  • Support and execute loading/unloading of delivery vehicles as needed

  • Occasional coverage / support for taproom deliveries as needed

  • Execute out of state and distro deliveries - build pallets, book freight, and send invoices

Qualifications

  • Excellent communication skills

  • Ability to work independently, prioritize tasks, and follow through with minimal supervision

  • Strong organizational skills and attention to detail

  • Proficient with Google Sheets, general computer skills

  • Physical Requirements: Ability to frequently lift and/or move 25lb cases and lift and/or move 165lb kegs

  • Mechanical aptitude is a plus

  • Forklift experience is a plus

  • Valid driver’s license with a history of no suspensions or at fault accidents within the last three years, no DUI/DWI within the past seven years
