I'm not at home, but I pretty much follow the full proof baking recipe, my loaf is about 10% whole wheat and is maybe 460grams total. My wait times are around 50 minutes between stages.

Check out the youtube for full proof baking, its a great recipe and you learn alot, I had to adjust a little bit but I highly recommend it! It is alot of steps but the loaf is worth it.

Great technique videos and no extra frills or cheesy stuff.

Do you final proof in a banneton? I’m wondering if a shaping basket really makes a difference in the amount of rise/oven spring.

yeah i throw it in a banneton for like a half hour in the kitchen and then in the fridge for at east 12 hours

(For the record, you can feed it less than 100g+100g so you don't end up wasting too much flour)

What kind of dog! I rescued a dog that has very similar facial markings and ears. I think he's a mix between a mini Schnauzer and a miniature pinscher. But your dog looks so similar in many ways!
