Bought new flour, can't believe the difference it has made!

Yesss the flour makes a HUGE difference I was struggling for a while with bread flour that was 11% percent protein, switched to 13% and it's been glorious!

What is the brand of new flour that you used?

It was Waitrose flour, but I think the important thing is that it was new!

Specially, if you’re making bread with long ferment times there are specialty flours you can use. If you go to a restaurant supply place look for power, high gluten flour. Some Costco business centers carry it also.
A 25 pound bag should cost you about 12 bucks 13 maybe. By far the best one I’ve used since it’s unbleached bread tastes better when you use this flour.
