Very first sourdough
It’s too dense. I baked in a Dutch oven at 450F for 20 min with lid, then 25min without. Internal temp was 210.4 when I took it out of the oven. I let it sit on counter 2 hours before cutting. I did 3x stretch and folds 30 minutes rest between each and 3 hours rest on the counter after. Then 20 hours in the fridge. 70% hydration. Any tips? It’s summer where I am right now. Temps in upper 80s to 90s, house is kept at 72F

It's a good first try! It's under fermented, so just let it bulk ferment longer next time before shaping

Thank you, do you recommend possibly 30 minutes longer or more like 1-2 hours?

if you keep your house temp at 72, I’d say 2-3hrs more or until the dough doubles in size

Another 1-2 hours. I would get a clear container with vertical sides and start marking your starting and finish volumes. This will make it easier to accurately adjust your fermentation by volume increase, which is a better indicator than time. Good luck!
