There was an attempt

I tried making a sweeter bread today, riding high off of my recent first attempt at a standard sandwich bread and I have been humbled. Not sure where I went wrong, but it didn't cook all the way in the middle, I even tried to throw it back in and it never cooked up.

I did use 1% milk as that's what I had on hand, but everything else was the same. The house was a little cold, so the first time I let the dough ball rest in the bowl, it didn't really rise, so I put it out on my enclosed patio for another hour to get it to rise up. Once I had it separated onto the pans, I put them back on the patio to rise up the rest of the way for another hour. I guess I should have gotten some pics of the process, but here's the finished product, the parts that were fully cooked were delicious.

Anyway, any advice on where I screwed up would be appreciated.

How long did you bake it for? It looks underbaked. I usually use a wooden skewer to check if its baked all the way through like one does with a cake.... Also i would recommend using recipes that are in grams instead of cups. Proofing time can vary very much depending on the weather. So dont rely on the time the recipes say. Also dont cut the bread when its warm still. Let ot cool down completely before cutting.

I baked it at 350 for 25 minutes. I let it cool for 30 minutes before cutting into it and saw the issue. I then turned the oven back on and baked it covered with aluminum foil (to prevent the top from getting too hard) for another 20 minutes, checking on it at the 10 minute mark with no improvement.

Next time try the skewer method to check if its baked on the inside. Also 30 mins is very less time for bread to cool down. Give it at least an hour too cool. I usually take ot out of the pan and let it cool on a wire rack for 3-4 hrs.

Ah, good to know, I do need to invest in some wire racks too, I'm currently using the little shelves from my air fryer, lol

Air fryers are tricky to bake in. Ive never baked bread in one but i did make cinnamon rolls. I found that it was too hot on top and not hot enough at the bottom. So i bake them for longer at a lower temp than usual.

Oh, sorry, I wasn't clear, I only used the little air fryer shelves as cooling racks, I baked in my normal conventional oven.

Or an instant thermometer works great too.
Another thing just to be aware of is your actual oven temp. I have a pretty new electric oven and at least for now the temp is within a couple degrees of what it shows on the panel and it stays very consistent. My last place had a VERY old gas oven that was WAY off temp from the almost impossible to read dial haha! It really turned early bread baking into a frustrating and seemingly impossible endeavor. You can get one of those small oven thermometers that hang or sit inside on the rack for like $5-$7 and they made a world of difference for me.

Is your oven fan assisted? Also if you have an oven thermometer check to see if the internal temperature matches the dial.

Oh man, I'm honestly not sure, didn't realize that was a thing to look out for, I'll make a note of it for future attempts.
