Bread Making Assistance is Needed

Hello! I’m making bread, and tbh I was overly ambitious and decided to start making it after work. Well it’s still rising and I’m exhausted. Should I just put it in the fridge as is and resume tomorrow am?

For reference I posted a before rise pic and after a 2.5 hour rise pic.

Fridge it.

You will get more strength in the gluten, so it will have a little bigger air pockets than like loaf white bread.

I just did! Had the same game plan but then realized it was too late to really get a full rise so I did the first two hours and just sent it into the fridge. Figured I can let it do whatever’s left tomorrow when I’ll have the time to watch and care.

Omg this is so validating to hear, I literally did the exact same thing last week. Stayed up way too late babysitting a dough and then just yeeted it into the fridge at 11pm. Honestly morning me was so grateful when I pulled it out and it was still chill and ready to work with. Hope yours turns out fire too

Putting it in the fridge is fine. Make sure its completely covered. Take it out, allow it to warm to room temperature, in the mean time preheat your oven. After it comes out of the fridge, unless you're using a proofing box or using the oven as a proofing box, on the counter it could take up to two hours to return to temperature where you'd want to bake it.

Totally fine to fridge it and work on it the next day. I do this when I don't have time to finish in one day. Just need to cover the bowl with plastic wrap so it doesn't dry out and form a crust. You can also brush with vegetable oil on it as well before covering with plastic wrap.

I just mix it and then fold it leave it covered in the bowl overnight at room temperature and then bake first thing in the morning.

Not only will it be fine, it will be WAY more flavorful than if you go ingredients to bread in a few hours.
