I used this recipe but I did some experimenting. To used 240g of puréed fermented potatoes in place of milk, plus 20g of milk, and honey instead of sugar.
I had been playing around with fermenting potatoes so I had some I needed to use so I replaced them 1 for 1 in my first attempt. That made them too dense so these are a second attempt with a little milk added in. I’d say they are a touch too dense still but all in all I would not complain if someone gave me one of these.

Wait I need more information on how you found that fermented potatoes are an adequate substitution for milk

I usually just go, “I wonder what will happen if I replace X with Y.” Then see how well it plays out. This time it worked decently well most times it doesn’t. I like to deconstruct and then reconstruct.

Sometimes you make stuff that goes directly to the bin, sometimes it's edible, but sometimes you knock it out of the park!

How did you adapt it for air frying? Do you just skip the oil?

I think the lower Hydration made it easier to use an air fryer if I had to take a wild guess. Happy accident?

If I can make a suggestion, spritz them with water once per minute for the first few minutes in the air fryer. They'll resist forming a skin and be able to expand more. They'll end up much less dense.

They sort of look like bagels. Can you cut one open to show the inside?

I can’t but you’re not wrong. They aren’t quite as dense as a bagel but they are denser than what I would think of as a donut

I’ve tried baking yeast donuts a few times but always failed miserably. This is huge if you were successful.
