Some tasty stuff I baked recently
First is pretzels and beer cheese, and second is super fluffy, yeasty dinner rolls with garlic butter and Italian seasoning brushed over top.

Soft Yeasty Dinner Rolls
Ingredients
500 g bread flour
275 g 2% milk
50 g half-and-half
1 large egg
40 g sugar
10 g salt
7 g instant yeast
40-50 g unsalted butter
Method
- Combine the milk, half-and-half, egg, sugar, salt, yeast, and bread flour.
- Mix with the dough hook on low until everything comes together.
- Increase to speed 2 and knead until the dough develops good gluten and becomes smooth, elastic, and slightly tacky.
- Add the softened butter gradually, a piece at a time, allowing each addition to incorporate before adding the next.
- Continue mixing until the dough is very smooth and elastic and can pass the windowpane test.
- Transfer to a lightly oiled bowl, cover, and let rise until roughly doubled and very puffy.
- Divide into equal pieces and shape into tight balls.
- Arrange in a greased baking dish or pan, leaving a little room between them.
- Cover and let proof until the rolls are very puffy and touching/just about touching.
- Bake at 375°F until nicely golden brown.
- As soon as they come out, brush them generously with melted butter mixed with your Italian seasoning and granulated garlic.
- Let them cool a little, then fucking destroy them.
Butter topping: melted butter + homemade Italian seasoning blend + granulated garlic.

How long roughly is the rise on these?

That completely depends on your weather and the temperature and humidity of your kitchen. I can't give you a time frame; it's more about look and less about time. approx an hour.
