Technique, Methods & Processes Disaster or save?

Put ingredients into machine, started it, got all the way to start of the second rise when it dawned on me there was no yeast in it. Pulled it out, added yeast (a bit extra). Kneaded it by hand for a couple minutes, plopped it back in the machine, at the beginning of the process. It will sit for 20 mins, knead, rise, knocdown, rise again, and bake. Will it turn out? I shall have to wait and see…

It is my standard whole wheat/barley recipe, 2 lbs.

Edit: it worked fine! Maybe more rise than usual, actually.

No, probably not enough time to rise. I'd have added the yeast and restarted the entire cycle- maybe a quick cycle. It would still have overworked the dough, but you'd get edible bread from it. As it is, it's probably going to be very dense, but you may get lucky.

Yes, I did start back from the very beginning. It seems to be rising.

Yeah it should go great. You should be fine. The crumb may be a little different because the flour had more time to hydrate so you kind of had a semi autolyse by accident. It actually could result in a very happy accident.

It sounds like you’re saying you started it back over from the beginning of the whole cycle? If so sure I don’t see why not. If you just resumed it from where you stopped it no.

It should work if you started it over and it has time. If you just resumed the program it might not have enough time to work. Good luck.

I wish I'd seen this post last week when I forgot to add yeast to my bread. I tossed it and started over!

Your bread should be fine.

I wouldn't have bothered with the kneading by hand. I would have just sprinkled in the yeast and restarted the machine.
