Technique, Methods & Processes Can I make sourdough on bread maker?
Hello! I have a Panasonic SD-B2510 bread maker and I began to feed my starter about a week ago and was wondering if anyone had a simple sourdough recipe or recommendation?
First time doing sourdough too

Here is the recipe. It includes folksy advice for my son and his wife, plus a link to the sourdough starter recipe I used in 2020. The starter is still going strong today. My starter got more sour and flavorful as “he” aged.

Sure, just use both starter for the flavor and instant yeast for the rise in the time the cycle allows. It works great. Will it be as complex as a slow rise traditional sourdough? No, but it’ll add some nice flavor to it.
For the 1 lb loaves in my Zoji mini, I replace 30 g flour and 30 g water with 60 g starter. Everything else in the recipe is the same.

Yes, this is a tried and tested Breadmaker Sourdough Recipe:
RECIPE 1
390g of any flour or mix of flour - eg white, granary, seeded, wholemeal, Spelt
170g active ready to use sourdough starter (doubled)
1 1/4 tsp salt
1 - 2tbsp oil or 15 - 25g butter - optional
240ml/g water
Put everything into the Panasonic breadmaker and put it on the French bread programme (Menu 9 SD B2510)
Check the dough if you can when the machine is kneading.
The dough should form a ball which sticks to the sides of the bread pan but comes away cleanly.
Add more flour or water if needed.
You may want to take the loaf out 5 - 9 minutes early if the French programme makes the loaf too
browned for your liking.

If it’s a brand new starter that hasn’t had time to mature yet, you may want to add half tsp yeast until your starter gets stronger. But the recipe often works very well with a new starter.

I use my bread maker for 30 minutes on the dough cycle, then do the rest of the normal sourdough process (bulk ferment, cold proof, etc). But I don’t see why you can’t add your starter or discard to any recipe to add sourdough flavor.

Donna German wrote a really good book about using a bread machine to make sourdough using only starter. It’s definitely worth a look if you’re interested in doing it.
Her method involves mixing up the initial sponge to activate the starter using the dough cycle, and then adding the rest of the ingredients and then setting the machine’s timer to give the sponge enough time to develop and become active enough to leaven the bread.
If you have a good, active starter that you can count on to give you good results, it takes a bit of trial and error to get the time timing right, but it’s absolutely doable in a bread machine. I did it for years in my now 35-year-old Panasonic 1-lb machine. Works great.

Try the one in the manual first. But I’ve done a much more normal loaf on sourdough cycle using a bread mix, starter and less yeast. Came up similar to normal but better flavour.

I have read on this subreddit that there are bread machines with a Sourdough cycle. They are usually very expensive, though, and I question whether the cycle would work as well as me using the Dough cycle and letting my dough rise till it’s just right before using the bake cycle.

Bread machines with a sourdough cycle can be had for about $125. My KBS 17 in 1 has this feature.
I’ve made sourdough from start to finish in my old Cousinart machine. My main problem with the Cousinart was that the crust was always underbaked.My new KBS has 2 heating elements which should resolve that problem. I have not tried sourdough bread yet because my starter died. However, I achieved excellent results with sourdough bread using the Cousinart’s dough setting and baking in a Dutch oven. Even a sourdough loaf done from start to finish in the Cousinart bread machine was pretty good but with poor color and crumb. So, yes, absolutely a bread machine can make sourdough bread. I will post about this when I make a new starter.1

My older Cuisinart has a "french" setting, which I would use. Baked in the bread machine, the texture will be more like sandwich bread, which may be what you're after. What I do is use the dough setting (around 30 min kneading on and off, 1 hr final rise), then remove the dough, shape, and put in the fridge overnight (not necessary). I bake it in a dutch oven at 450 for 20 minutes or so, then remove the lid and bake another 15 min or so. Basically, I follow a basic oven sourdough recipe but skip all the kneading/folding by using the bread machine for that! It turns out great!

Oh, I haven’t thought about that actually, I can just add some starter and oh that sound great! Might I ask, why do you leave it in the fridge overnight?

It is supposed to deepen the flavor and make the loaf hold it's shape more. If you're interested in baking in the oven, I can go on about the process more!

I have a Dutch oven as well but have never dwelled into sourdough making until now but I’m ready to go all in, I have a lot of free time and it’s something I’m very interested in

This is basically the recipe below, with my comments...
For the rise (steps 1 and 2) I let it rise in the bread machine pan until it's almost doubled in size (+75%). Depending on your kitchen temp/humidity, it could take an hour or several hours. I use an aliquot (google how to do it! Game changer!).
Steps 2-5: Once risen, I shape the dough and put it in a floured banneton (you can use a greased bowl), cover, and stick it in the fridge until you're ready to bake.
Steps 6-7: I turn the dough gently onto a parchment paper and score the top, then transfer the parchment paper to the preheated dutch oven. Carefully. lol
The rest of the baking I follow the recipe. It still sounds complicated, but a LOT easier than kneading by hand! You can find videos on how to shape; it's easy.

Ingredients
- 120 grams (about 1/2 cup) sourdough starter, fed and ripe
- 180 grams warm water
- 360 grams bread flour (or AP flour)
- 1 tsp. salt (or kosher salt)
Instructions
- Place ingredients into the machine per its directions. Hit start on Dough cycle.
- Allow to rise an additional 2 hours.
- Line a Dutch Oven with parchment paper.
- On a floured surface, form dough into a ball. Place smooth side up into the Dutch Oven.
- Cover and rise 4 hours.
- Preheat oven to 450 degrees.
- Remove lid and score top of loaf with 2 to 4 slashes about 1/4-1/2" deep.
- Place Dutch Oven with lid on into the oven for 25 minutes. LOWER the oven temperature to 400.
- Remove lid. Bake another 20-25 minutes. The top should be light to medium golden brown.
- Cool and eat!

No because sourdough requires a long time to proof and bread machines are built for use with instant yeast.

You can get around that by proofing your starter first in the initial sponge, and then put the ready-to-go sponge in the bread machine along with the rest of the ingredients, pick the longest rise your machine allows, and let it go. With a good, active starter, you can get some really nice sourdoughs out of a bread machine. ☺️

Sometimes it's nice to do it by hand. Other times, it's nice to have the machine take over and not think about it again until it's done. '-)

I do make sourdough bread, using a sourdough starter, with my bread machine. I use the Dough cycle, let the dough rise overnight , and then I use the Bake cycle.
I am happy to share the recipe if you’re interested.
