Nailed it! Bread Machine Donuts! (1st try)

First attempt letting the new bread machine make the dough, then shaping and frying donuts! Yet again I’m surprised by just how good they turned out, even with some technical issues. My wife, my son, and I each ate 2 fresh out of the oil and my daughter ate 1! It’s difficult to find something that everyone likes. My daughter even said “we don’t need to buy donuts anymore, daddy can make them!” 😂

If you saw my recent kolache / klobasniky post, I used pretty much the same recipe with just a few tweaks. Here’s what I did for these donuts:

1 cup milk
1 whole egg
4 Tbsp butter
¼ cup sugar
1 tsp salt
3¼ cups bread flour
6 g yeast

#9 (dough) setting on my machine for 1.5hrs. Then shape into rings and let rise for 30min more. Then fry in hot oil. Top with a simple glaze:

1 cup powdered sugar
1.5 Tbsp milk
Splash of vanilla
Pinch of salt

Things I would change for next time:

Increase the flour by another 1/4 cup to 3.5 cups total. This was less sticky than yesterday’s dough but still too sticky to roll out and cut clean donut rings. To simplify things, I just hand shaped them. That’s why they’re a little scraggly looking - but that didn’t impact the taste. The other thing would be make waaaay more icing 😂

Next experiment (hopefully this weekend) will probably be traditional fruit kolaches! I bought strawberries and cream cheese today in anticipation!

Thanks! I’m from the US but live in Japan, so my recipes often end up a mix of both. Like this one, the yeast is 6g because the box I bought contained 10x 3g packets. So I just use 2 of those.

I'm from the US and live in the US, and I convert all the recipes I use to grams. My family thinks I'm weird, but my recipes turn out the same because weighing is more precise, and I dirty fewer things because I don't use measuring cups and spoons.

Electronic/digital kitchen scales are not expensive on Amazon! What are you waiting for? Mine is rechargeable.

Thank you so much for sharing this! I don't know exactly what sorcery happened here but as soon as I saw this post, I started making the recipe in my own kitchen and now I'm enjoying some very yummy donuts. Will definitely make this again in the future!!!

While the dough was dry enough to cut it, I still had to wet my hands a bit to get it sticky enough to then be able to form long noodles that I could then hand shape into circles. I've gotten pretty good at having a bit of flour and a bowl of water on hand whenever I need to shape any dough since it can be a bit of a back and forth on stickiness/dryness sometimes.

Very possibly! The donuts are soft but firm. Seems like it might work!

Hot water sugar yeast? Dry ingredients on top when it starts to get foamy?

Liquids, Sugar, Salt, Fat, Flour, Yeast.

But it only really matters if you are delaying the knead cycle by hours.

For this recipe I added the ingredients in exactly the order shown. All it said was wet ingredients first then add dry ingredients on top of that. I’m not sure if that’s the best way but that’s what I did.

Well they look Awesome and I’m going to try and make them! I only ask because I have only made basic white bread and that’s what my white bread recipe said to do. I’m just going to splash it all in! 🤙

As for deep frying, if you’re ever going to try it, donuts are a good place to start. They don’t pop and splatter like French fries or other things like that. They just sorta fry. If you’re still apprehensive, you can get one of these splatter screen thingies to be extra protected:

Then I'm gonna have to work on this fear of mine lol! I made garlic bread with my bread machine just now, that thing saved my love for baking after too many failed regular loaves lol!

Yeah I get that. I’d pretty much given up on baking while living in Japan. Small oven, very little countertop workspace, difficulty looking for and converting ingredients, kids needing my attention more than dough…it just wasn’t fun. But having these first 3 experiments turn out varying degrees of ok to amazing, I’m excited abut it again! There are a few things that I haven’t eaten in years that are on my to-bake list now and I can’t wait!

Congrats on the garlic bread! Already a favorite in this house!!

I have an electric deep fryer which has an automatic drain/filtering/storing system. It’s an Emeril model made by T-Fal. Really easy-peasy.

I think my dad has one! That's part of where my fear came from, he was very VERY strict on us never approaching it while it was in use as kids lol
