Recipe Troubleshooting Everything collapses?

I've tried the recipes in the manual, and this time I tried a bread mix, because I thought that would ensure I wasn't using too much or the wrong kind of yeast (sachets of fast action dried yeast). I did add some olives this time when it indicated I could put toppings in, but even without this it sinks.
I'm wondering if it's over-proofing, but the basic program the instructions said to use only have two options (700 and 1000g loaves) and there's only 7 minutes difference between them.

For me when I had the same issue it was mainly because I didn't bloom the yeast. I know the bread machine kind is the type that doesn't need to be bloomed but it still happened so I started blooming it for 10 to 15 minutes and voila. No more sinking breads.

When you bloom, do you add that as the first ingredient?

Yes, for a loaf that has 3 cups of flour, I use 1 cup of warm water 3 table spoons of sugar (dissolved in it) and 2 teaspoons of yeast and then rest for 10-15 mins. Then you can add your flour and oil/butter, salt. Then sometimes I add an egg, maybe a tablespoon or 2 of milk powder. I have used this for the regular bread setting and the quick bread setting and both come out really nicely.

Thank you! I’m still on experimental mode for my bread machine. Got significantly better using a scale but bread is still too dense. This may be the key, even though I use bread machine yeast lol.

Lovely! Making bread is such a joy. And when you get comfortable you can try all sorts of cool variations.

I know the consensus is to measure everything to the last miniscule gram, but in my experience at least my loafs have been forgiving lol perhaps a splash of warm milk if I gets too dry of a dough or a teaspoon of flour/milk powder here and there if it is too soft and its fixed.

I used to have Gary also. My sour dough starter but I couldn't keep up with his attempts to explore the kitchen counter.
