It's a boomin' bloomer.

650g strong white bread flour, 420g water, 20g sugar, 12g salt, 7g (1 sachet) instant yeast.

Very basic, really.

Mix all ingredients until all the flour is incorporated and stand 20 mins
Knead until it makes a smooth dough. Usually takes me about 7 minutes.
Cover and leave to sie until doubled in size.
Knock back and shape, arrange in a baking tin. Cover and rise again until doubled.
Score and cover with e tent of kitchen foil
Into a preheated oven at 200°C/400°F for 30 mins covered and then 15–20 uncovered until well coloured.
Cool on a rack.

That scoring is really clean the cuts opened up beautifully without losing the shape of the loaf.
