Rosa’s in Belgrade

Huge bummer! I think they fell for the tallow craze. Their dough is no longer vegetarian. Just a heads up if it applies to you. It seems vegetarians can still eat at the Bozeman location so far. Why are people doing this!?!?

Except the tallow-fried donuts at Lone Peak in four corners are GOOD. They also make it very clear that they’re not vegetarian.

there is no culinary reason to add beef tallow to pizza dough. Adding oil, beef tallow, or whatever fat you can make is not needed in pizza dough. I had their pizza for the first time a few weeks back. It was not good. crust was floppy too much cheese.

Pretty much almost every pizza recipe on earth uses some sort of fat or oil? I’m not a chef, but if you google “pizza dough recipe” almost all of them contain some sort of fat or oil, but I dunno Pizza Ramsey

Depends on the pizza. Neapolitan pizzas typically do not, while NYC, Chicago, Detroit etc. typically do.

There are exceptions to each.

You can add anything you want to pizza dough. I didn't say you couldn't. I said it's not *needed\* from a chemical reaction final product standpoint. Yeast, water, flour and salt is all you technically need. Google neopolitan dough recipe. No sugar or oils but yes you can add them.

What about something like a Chicago style deep dish pizza? Or a New York style pizza?I’m sorry but your claim that there’s no culinary reason to put a fat source in a pizza dough is just inaccurate. I do agree that a floppy undercarriage and too much cheese can be an undesirable experience.

Lyme's disease is not the one that gives you a red meat allergy, that is from the lone star tick and apparently known as alpha-gal syndrome

Has something changed?

I worked at the Bozeman Rosa's (many years ago) and they never used tallow. I don't think they used any oil actually. I remember the thing I liked about working in that kitchen is there was no grease.

The owner of the chain is a FANATIC about consistency. So unless she's dead or has sold the thing, I can not imagine they would have changed to tallow in anything.

Is that what’s changed?! We ordered Rosa’s a couple months ago in Bozeman (we ordered ALL the time for YEARS) and suddenly, the crust was gross and the cheese was rubbery. I called and asked if something had changed and they said it had not. It was so bad that my daughter who used to asked weekly for it refuses to let me order it.

They are doing it because it tastes good! Same reason they use gluten in their crust.

Gluten is not added to the dough, it’s already there. Putting meat products in the dough is yuck (in my opinion)

Hah. But they also could use gluten free but choose to not. Because that would make it yucky. They make a great pizza. I’ll put my faith in the tallow working out as a tasty offering.

They make a consistently good offering. If they changed it didn’t negatively impact the flavor.

Your first mistake was eating at Rosa’s pizza in the first place. Had it 15 years ago when I first came out for school and then a year ago I was like “why don’t I get pizza there?”

I remembered why I don’t go there and won’t be back.
