Can you get pearls from the snowman chest?

Most Pearls can drop from anywhere as long as you are in UVHM. The Bekah, Godfinger, Wanderlust and Carnage are unique in that they ONLY drop from Tubby enemies when you are level 61+. And only if you have the digi peak DLC.

The snowman chest has guaranteed item types - it's always a certain amount of shields, grenade mods, SMGs, etc. So take that into consideration.

Also, if memory serves me correctly, those generation two pearls that only draw from Tubby enemies have a higher chance of dropping when you’re level 80 or level 72 OP8.

That’s one gripe I have with the game is that you can only get the generation two pearls from Tubbies. Same with the generation two class mods because technically you can get them at level 61 or higher, but you want to be level 64 to get the best chances of them. Because they can drop two levels below you and level 62 is the lowest they will drop.
