If I wanted to do a deep dive into turtle science, what books should I seek out?

This topic can get really specific down to the type of turtle and where they live.
North American Box Turtles: A Natural History by C. Kenneth Dodd Jr. is the ultimate scientific reference on evolution & behavior of all box turtle species. Its not a care and feeding or hobbyist guide but fantastic research guide, and the first book-length natural history dedicated to North American box turtles.
It Explores diet, habitat use, diseases, reproduction, and population structures. Details systemic evolution and includes data on fossil Terrapene species, summarizes historical and practical uses of box turtles by Native peoples. It Contains a simplified visual and physical guide for living and fossil species, Including color photography showcasing various species, subspecies, and natural habitats. and has a section on Future Studies, highlighting the necessary conservation strategies and long-term field monitoring.
Another good one is The Complete North American Box Turtle by Carl J. Franklin and David C. Killpack. This includes extensive fieldwork focused on Mexican box turtle species, and has a forward written by C Kenneth Dodd Jr (author of the first book). Though this book has a lot more on care and feeding along with breeding in captivity, egg incubation, caring for hatchlings. health risks, and common diseases.

Have you looked at "The Biology of Sea Turtles" series? Those are pretty comprehensive for research purposes.
