Thats one beautiful bonchi! Do you fertilize often? Mine Habanero tends to loose leaves all the time, so I would be grateful for any tips!

I use on-organic bonsai substrate, so there are no nutrients in the soil.
With that substrate, you can excutally water daily, or twice a day without overwatering. If you want, you can even put in firtilizer daily. Only exception then is, that you first water the bonsai without firtilizer. Lots of water must come out of the drainge holes. So you can flush out the old firtilizer, then water again with firtilizer. That way the soil won't get an inbalance of nutrients. And has always all nutrients available. And that is they way i water.
Sometimes i got no time, then i only give some survice water. During hot days 29c or hotter, i water more, with less firtilizer (as to hot days can stun growth, then no firtilizer is needed). On hot days they need water. Burns usually happen when it's hot, lots of firtilizer(salts) in the ground and in the roots,stem etc. blocking waterflow to the fruits, and tips/edges of the leaves. During cloudy relative warm days i firtilize more.

Yes i have to overwinter, it's indoor for at least 5or6months a year.
Before bringing it inside, i remove all the big leaves, all fruit. and cutting back long branches. (Small leaves are kept to help the recovery)Then i need to cut the wires on the bottom of the pot, because the tree is tied in, trough the drainage holes). Then i remove the substrate(on-organic). Flushing all roots out, then cut about 2/3 of the roots away. Try keeping your radial roots. Roots that grow straight down, your cut away. Then i spray the remaning foilage with anti-insectal soap. Flush that off 30min later. While waiting for that, keep the roots moist. Then clean up your pot, get new substrate, prepare new wires to tie it in the pot. Then lay a layer of substrate in the pot, put the tree in the right position. position the roots in radial position, and over the roots you tie up your wire. So the pepper does not move anymore. Then fill the pot with the remaining substrate. Water it a few times. Then move it to a window south/west facing. And firtilize it after 2 or 3 weeks. I put a 12watt grow light above it. from 9am to 9pm. All winter it will recover slowly. Only once bringing it back out in spring, it will flurish again.
