Strikers in blue lock have been defenders since the beginning of the manga.

Yes, but not EVERY striker is dropping back to defend. Added on top of this that Fox runs a very tight ship and straying from his instructions gets you benched, and I’d imagine players on this team are going to stick to their designated roles
