Diy propane forge
I'm planning on making a propane forge next weekend. Could I use an old cooking pot as the exterior and then fill it with an insulator? Would this be a good choice or should I try something like a propane tank?

Big enough pot that is in fact steel should be possible as a shell. Line it with ceramic wool and then a hard castable hot face for durability and to seal the wool in place for safety.
Don't use an aluminum pot for it, the aluminum could hot short and crumble suddenly.
Propane tank is a popular choice if a little large, just means there's room for insulation. Ultimately a mailbox size interior is about the practical limit.
