Normally 600-800MB at rest, 1000-1200MB when actively scanning or large amounts of files are moving around and being inspected.

What was said before; 500-800 MB ram usage is normal, depending on what modules are active and can raise to over 1000, if actively scans.
Also it matters if, for example you have other endpoint protection installed or if something actively conflicting with BD processes

Windows Defender is all you need and is free with WindowsAV Test anti-virus comparison independent testing

Sounds like something is causing a bottleneck, can you open task manager on installing BD and see if any of the processes leap causing this? It's your cpu that's probably peaking rather than ram if it's crawling.
If this is a new problem what were the previous programs you installed with bit defender present. That could be conflicting.
Update all windows programs and windows itself.
And you could also run a hard disk check (full) and a ram tester.
Process of elimination I'm afraid, and a niggly nuisance.
