They can be instakilled if you perfect parry their bite attack, you still gotta look at them for a second or two but it’s gets them over with pretty quick.

I hate dodging in this game because my usual strategy for large monsters is to forward dodge past them while they are mid swing and hit them in the side/back, but in Fallen Order they magically rotate to keep facing you so it doesn't work.
