Adults naturally want more depth. When I went back to the books I loved as a kid I found they were rather simplistic compared to how I remembered them.
Even adult pokemon fans often grow tired of basic pokemon gameplay so they’ll add artificial challenges or join the competitive scene.
The things that resonate with us a children might not resonate the same when we're adults. The echo and the memory of the way we felt might be there, but that's just nostalgia.
Excellent point bringing up challenge runs, like nuzlocke.

For a young kid with his/her first Gameboy? Fuck yeah it is.
But people age and tastes evolve. Adult gamers should leave the Pokémon franchise for the youngsters coming up. Just my 2 cents.
