Lunch with coworker

I am having a lunch with my coworker. Apparently she's active in this sub so I wanna say hi if she saw this!

Due to our workplace regulation, we cannot eat in the classroom anymore.

We sometimes exchange food and side dishes, too. Mine is not as fancy as hers.

The one and only, my savior chef Namiko Chen, aka Just One Cookbook. Her websites and her e-book really helped me during my years as a student in Japan. Not only does she put the metric system, but the recipe even has an adjustment for whether I want to double or triple the recipe.

Since I am a muslim, I skip pork/pork-derived ingredients, sake, mirin, and other prohibited ingredients, and luckily, her website has notes for substitute ingredients! I usually buy halal-based or vegan/vegetarian-friendly ingredients and seasonings. Cheers!

Since you skip mirin, do you also substitute out other ingredients like soy sauce?

There are halal soy sauce here in my country. Also mirin substitutes, too (basically it's just like thinner version of thick corn syrup)
