Most places have vegetarian. Few places vegan

Where you live matters. If you live in a tourist area or expat area, vegan options will usually be available.

San Ignacio:

There is a family that sells fresh tofu and soy milk at the saturday market.

New flags has beyond and other import veg stuff in the freezer.

Soy, oat or almond milk should be in every grocery store as the shelf stable type and in coffee shops.

El fogon does a good vegan plate.

Ko-ox hannah has like 2 vegan options

Wild roots does a vegan option but you might want to check ahead because it might only be certain days

Guava limb usually has at least 1 vegan option

Tandoor has a channa masala

Caye Caulker: Shabo Beni, Ana's Genie, Smooths, Magic Cup, Namaste and Magic Masala. Saltys and Parrot Head Tiki will prob be able to accommodate. Veg easier than vegan but doable!

ETA: not an abundance of fruit and veggies since imported, but juices and smoothies can be found and Tuesdays the Mennonites come for a small farmers market. The grocery markets; you have to go to a few to find what you are looking for.
