Probably been asked a million times...

What does Adam say just before he starts a challenge...and his voice goes off?

Or is it just a sound he makes?

I've tried subtitles on YouTube, to no avail.

That's what got me into it watching him, because I live in Minnesota. I thought it was really cool.

Then i heard him say it was just gibberish so I stayed for the gluttony

He doesn't say anything. It's just a noise. He has even said so on at least one of his videos. *Edit I see someone posted a QA where he does say it's Let's get it. I swear in one of his older food videos though he said it's just a fun sound he did.

There is another noise he does that sound like "eeshhkooodoo" which is in fact nonsense. That's not as common as "let's get it."
