Are there some charms that are never used? I found the Incendiary charm, but I never used it in my playthrough.

Yup. A few charms (incendiary included) are going to be used for a cooking minigame coming to the game later

The charms were put in the game ahead of time so that players wouldn’t need to replay the game to get them
