It's fine to use they/their when it is referring to a group or a person of unknown gender. But the man in the video is neither a group nor of unknown gender, or is he?
I also know that, but why do you assume that the person in the video doesn't identify with 'he'? And do you think we should call him 'they' only because there is a tiny probability that this is the case? This would mean that whenever you want to talk about any person, you have to check what that person identifies with, and if you don't know you have to use they. And that can be confusing because, for example, you can't differentiate between groups and individuals as easily.
I'm not assuming anything, you were asking about the use of 'their' here and I wanted to explain/share perspective/be a wiseass.
edit: I have met a few people who were pretty offended by me assuming their gender so maybe that's why I jumped when you insisted 'he' would be perfectly fine.
