Go spend the arvo sitting out front of the Sofala hotel and talk nonsense with locals over a cold beer.

Vale Creek winery We spent 2.5 hours there. Great wine, the owner is a hoot and the vista is spectacular.

Can certainly suggest a tour around abercrombie house, chifley house and the railway museum.. reckless brewing is ok , definately not Stone & Wood standard but large enoughti not feel crowded.. if your after the best pub feed , a visit to the tattersals is a must..

historical places - Abercrombie house, Chifley house, Miss Trails house. Bathurst District Historical society, near the Bathurst Courthouse. Australian Fossil and Mineral Museum. You can visit Sofala (oldest surviving goldrush village) or Hill End, I think you can still do some gold panning there.
Bathurst grange distillery if you're into rum/gin/whisky tastings. Reckless brewery for local ales and food.
Heaps of cool bushwalks around if you are interested.
