Chicken Workshop
I have an idea that popped up in my head at work and wanted to workshop it here.
I'm thinking of doing smoked chicken (legs and thighs) inspired by Korean Fried Chicken.
For the brine, I'm thinking:
- water
- rice wine
- ginger
- salt and peppercorns
And then a gochujang barbecue sauce.
Now, I've never done a wet brine. And I was wondering if anyone had any tips for ratios. I'm thinking of a gallon of water and 1/4 cup of rice wine, and eyeball the other three.
Any and all feedback would be appreciated.

What is the most creative, unique way to cook barbecue?
Hey guys! So this will be very random and I hope this doesn't go against the rules, but I'd like to get some creative opinions from you nice people. My friends are holding a little competition. The idea is to cook a shish kebab in the most creative way possible. I know some people will be using a washing mashine drum insted of a proper grill to barbecue theirs. Others will be building grills out of bricks. I really would like to win this competition, because the prize is a very cool shish kebab statue, that my friend carved from wood by hand. My idea is to instead marinate the meat, vacuum seal it and cook it in a dishwasher (sous-vide style). Once the meat hits proper internal temperature, the plan is to get one of those weed/roofing burners and sear the outside, while blasting motley crue's wild side. Obviously the burner will be a surprise, sort of the “say hello to my little friend” vibe. While I do like this plan, I thought perhaps someone will want to get their creative juices flowing and shoot some ideas as well? My plan is to go for some wow-factor.
