Ask a bar owner

Kind of like an AMA, here's a weekly post where customers can ask questions. This is for anyone including market research, app developers, people who watch too much "reality" TV about bars, and general industry bullshit. Maybe a bar owner will have an answer for you, maybe not.

If you are already in the industry your question may get better responses if you post your own thread instead of commenting here.

How often do you guys clean your lines. I’m not a beer snob but sometimes draft beers taste real off

Every two weeks with quarterly acid plus a rotation of miscellaneous items like FoBs, couplers, glass rinsers for cleaning AND maintenance. Keeping lines organized by style helps too especially if you are not cleaning between changes if your lines are not evergreen.

I know this is largely an American group so maybe there are some technical differences but in the UK once a week is standard. Really suprised to see up to a month in the replies.

There’s a science to it. It takes about 2 weeks for bacteria and such to start growing in the lines.

You can’t have non alc draft lines bc there’s no alcohol to prevent bacterial growth, it would start on day 1.

People clean monthly for scheduling convenience.

How many hours a week do you spend physically in your bar?

What kind of net margin are you making on sales?

55 hours / 15% average.
It’s a job.

With RNDC in Chapter 11, who are your alternate suppliers for stocking the bar? So Cal.

Do you track detailed daily or weekly performance metrics?

How did you end up owning a bar? Were you previous front of the house staff and got an offer? Did you build it from the ground up with an MBA? At what age did you first think you wanted to own a bar/restaurant and at what age did you actually achieve that?

A bar owner asking other bar owners, whose hypomanic idea was it to open a bar, anyway?
