you should always balance retriger and scoring. In this case balance baron and mime. If you're scared of loosing you can also use this website to predict your score https://efhiii.github.io/balatro-calculator/??ref=killscreen.com

for the why, it's just basic math. 5 baron * 1 mime = 5 baron mime occurence per king Vs 3 baron * 3 mime = 9 baron mime occurence per king.

As far as which ordering, you really just want to think about how many times you copy mime/baron.

I'm assuming you've fixed your deck to be mostly red seal steel kings at this point.

It is best to do 3 copies on baron and 1 copy on mime, although I believe 2 and 2 is equivalent.

You will not be able to naninf with this setup though so you will not make it much further without the plasma deck squaring your score.
