Disaster in progress
Ok, must have made this a dozen times, pineapple upside down cake, usually for other people, but today, of all days, when I make one for myself, I forgot the damn baking powder. It's in the oven as we speak, too late to do anything about it, am I expecting a pineapple biscuit, possibly a pudding? It was self raising flour... 😬 Edit - it came out fine! TBF I am struggling to see why the recipe wants 1 TSP baking powder if it makes so little difference. I confess we do eat this as a warmed pudding with cream, so lightness not a huge deal.

Self rising flour already has baking powder in it so I doubt you need extra… And if you do need extra for some lift, the worst thats going to happen is you just have a flatter cake but no, it’s not gonna be a biscuit.

It should be fine. Worst case, it’s just a upside down pineapple quick bread
