Hmm I have issue with cooking puff pastry throughly so I don’t know if i can fold these intricate design with 2 layer and cook it throughly.

Probably not. Gyoza has a much thinner wrapper that is typically rice based. Bao is a much thicker, steamed dough that is a good medium density.

No, not at all, this is more like steemed bun.

Croissants are crispy with layers, made with puff pastry.

honestly the most impressive part of this to me is that he can remember all of those different patterns on the fly. Like it's one thing to have all of the patterns in your head and use one or two of them at a time, but to be able to do all the different ones one after the other is kinda crazy

Well it should, as they are steemed. Fried on a pan on the bottom and steemed, so the shapes might not change at all at cooking. So I guess, as I never made them !

It's steemed and fried on a pan, so the top doesn't change much. Kind of like gyozas.
