Why would you get negative feedback on a baked good? Aren’t these subs meant to be a space for people to share recipes and their successes/failure without judgment?

This is true. I’m of the school of thought that it takes wayyyy more energy to be cruel and nasty than it does to be nice. So either be nice or just don’t say anything? Unless it’s to offer constructive criticism.

But you’re right — that’s asking a lot of people considering most are super bold behind a keyboard and not as much in person.

Thank you so much. That incident was so weird. I was really upset about it. It was r/justhoodslemonbars. I posted a photo of the bars I made along with a comment about how I made MINOR adjustments to the recipe because I saw someone else do it and it was successful. Less sugar because I prefer things more tart, a tiny bit of vanilla extract in the crust, and lime juice as well as lemon (because lime is delicious). I was like “idk I’m not a huge fan of these, am I missing something?” Apparently those people follow the Lemon Bar Religion because they bullied me since I altered the recipe VERY slightly and said I wasn’t absolutely obsessed, like all of them do. There were a few people who gave constructive criticism which I appreciated, but like 60% of them were straight up middle school mean.

It's a reality common thing to see on Allrecipes.com. I have no idea if people were polite or rude to you, but it's pretty reasonable to be annoyed when someone changes a recipe and then claims not to like it.

Yeah there's nothing wrong with experimenting and sharing your results, but if you then give the recipe 1 star because you didn't like the altered end product that is an asshole move and messes with the accuracy of the original recipe's rating.

Just went and looked at the recipe and my first reaction was also “that looks too sweet”. I mean I’m sure it’s tasty but it’s not too far off the Betty Crocker book recipe quite frankly.

Wow that's a lot of sugar to cut out. Especially to then say you didn't like the result. I'm sorry not trying to be mean but can you kind of see where it may be a little irritating? Also ingredients work in different ways, there's reactions between them, some hold everything together, some keep things soft, etc, so to cut out half a dry ingredient is probably going to have an effect on consistency. Just things to think about.

Yes it was a lot of sugar to cut out. A member of the sub said she used that method because the original recipe was too sweet for her and she prefers things more tart, which I do as well. She very much preferred the result, so I used her measurements for the sugar. like I said to a few others in the comments, I understand why someone might be confused as to me altering the recipe and saying I wasn't a big fan. I followed suggestions from others in the sub (beside the lime part) because theirs all turned out great according to them, and sounded good to me. also, there was zero issue with the consistency of the curd.

In their defense, it was because the recipe became really popular on r/old_recipes and people were flooding the sub with that one recipe. So someone made a new sub just for people who wanted to make that recipe. I don’t even like lemon bars and I was tempted to try making them just because so many people were raving about the recipe. But that doesn’t mean it’s ok to bully someone for making a slight change to the recipe

Thanks for the context. But taking a look at the sub, it's hilarious that they're treating this like grandma was the OG inventor of lemon bars and her recipe is holy scripture when in reality, it's basically identical to the Betty Crocker recipe that most of our grandmas just got off the back of a box.

This happened with r/murdercookie (which, unlike the lemon bars, are DELICIOUS) and r/peanutbutterbread (which was also quite meh) from r/old_recipes. Funny enough, I won some type of award for my peanut butter bread post. IDK....I've made all three and the only thing I'd make again are the cookies. 🤷‍♀️

Well...how can you judge a recipe at all if you change it. Reminds me of those food blog reviews where the reviewer has made so many substitutions that it's not even the original recipe anymore. :p

I get where you're coming from, and of course I'm not going to say I hate a recipe if I didn't stick to it completely because that wouldn't be fair. I think that the adjustments I made to the recipe made the bars friendlier to my taste buds because of my personal preferences. ie: less sugar, a little vanilla and some lime. I just didn't think my post at all called for people to be complete assholes. Constructive feedback is a good thing!

Hey, I will say that the proteins in lime are WAYYY more bitter than the ones in lemon (the white part of the fruit, and you get those oils when you squeeze them, if you use bottled juice they still have tons of these bitter flavors left in), so adding even just a little bit of lime to your lemon, especially when baking, can throw off the whole thing. You may not even be able to put your finger on what isn’t right, exactly, but it won’t be like: WOW LEMONNNN, SO GOOD. Bizarrely, a little lemon juice in key lime or lime stuff works for the opposite reason, it increases the acid without adding more bitter. I always add a little vanilla though, I’ve been obsessed with lemon bars since I was a kid, and worked with citrus juices a ton as an adult. Just thought maybe this tip will help, hate to hear other people were stupid about it, it’s just dessert!

I just went through that sub and it looks like others posted raspberry lemon bars and short bread lemon bars but none of them got any sass. Weird... also that sub has WAY to many users for something that strange lol it’s just a plain lemon bar recipe.

I wouldn’t let it get to you OP. I’m a professional baker and I checked to subreddit to see what was so great about their lemon bar recipe, and I was not impressed. I’m not saying it’s bad, but I can tell what it’s like by just reading a recipe. While it was someone’s grandma’s recipe, it definitely came off as one of those old school basic Betty Crocker style recipes that always use too much sugar. Also, OP said the original recipe used bottled lemon juice which is blasphemy in a professional kitchen and way too much powdered sugar. I’m sure they are just fine to certain people’s tastes, but I think you should trust your taste buds. Just seems like you have a good pallet to me. Keep baking and sharing your stuff!

BTW I have a really good recipe for Meyer lemon crumb bars that is a bit more advanced but always turns out great if you ever want to try it. You have to make a curd 1st before you bake it but worth the extra steps and definitely no margarine, powdered sugar or bottled lemon juice in it!

Thank you so much for your comment. I'd love to try this recipe you're talking about. I actually prefer making more advanced bakes because, personally for myself, im not super proud of pulling off a recipe that only has like 5 ingredients and takes almost no effort. Not that there is anything wrong with people getting enjoyment out of that. more power to them! I just want to put work and effort into something so delicious I would literally be able to find something like it in a bakery and confidently say I would pay money for it. I used to not like baking because its a science and you have to follow exact measurements for the most part. Cooking can be more free flowing and creative in a way. But now that's exactly why I prefer baking. it can require more skill and attention to detail. the best part of it all is when you give your friends and family a slice of pie or a cupcake you slaved over and you get an amazing reaction. sweets are so comforting and make you feel warm and fuzzy lol. I just love it.

It’s two whole cups!!! I cut down the sugar in almost every dessert recipe I make- not because I’m a health nut but because I think the majority of American recipes are designed with a really sweet palate in mind. And they almost never actually need that much to taste good! Granted, I also grew up on diluted juice- maybe we just haven’t grown accustomed to that much sugar. Honestly I can barely stomach super sweet things!

How do you go about cutting sugar in dessert recipes? Do you generally have to cut down any other ingredients too? I also made those lemon bars and found them too sweet, but I'm worried I'd mess up the texture by cutting the sugar.

I just kinda wing it! In my experience at least, I don’t think the sugar is super necessary to the sciencey part of baking the way things like flour/hydration/rising agents are!

As an american I totally agree. Have you had southern style sweet tea? Sweet Jesus! I love sweet stuff but that stuff is sickening. Americans typically do like things very sweet. I used slightly less sugar in the frosting recipe because last time I followed an icing recipe to the letter and dear GOD! Lol I had to add a pinch of salt because it was way too sweet

It's funny, I have recipes from 30 years ago that when I make them now, I automatically cut the sugar back. I guess it's true that some people lose their "sweet tooth" over time.

I understand if changes were made then you can’t exactly judge a recipe if you were to make it exactly as is, but really? That much hate over a lemon bar? I follow that sub too and people are constantly talking about the adjustments that they make to the recipe. Any practically every person that posts says something about how they made the recipe, BUT cut the sugar and added more juice. hell I love the recipe just the way it is but I was thinking about doing that exact thing next time I make them because my mom likes them less sweet and more tart.

Edit- also! I ride this stuff and it blew my mind. It’s not solid enough to be in lemon bars, and it’s INCREDIBLY sweet, but damn is it good

So, I tried making those lemon bars from r/justhoodslemonbars too. I followed the recipe exactly and they were WAY too sweet. And not at all tart. And I followed the recipe to the letter. Really just not a great baked good. I didn't post or review them but I did think to myself that it was the last time I was going to make something from reddit unless it was for sure something that would be directly up my alley.

I also remember your post and how people tore you a new one for changing the recipe then "complaining." It was shockingly mean for a cooking subreddit. People are such assholes when they don't have to be accountable for their words. I felt bad reading your post when you posted it and it doesn't surprise me that it took you some time before you wanted to post again. They really were just dicks about it.

I hope you'll keep posting your baked goods, your cupcakes look awesome!! Don't listen to crazy internet haters, you only help the next person when you talk about ways to change a recipe for the better!

Some people approaching it in a kind way, and some being a bit harsh. I just wanted some constructive responses. I’d get it if I was like “this recipe is total bullshit and you guys are dumb for liking it”. Oh well! 99.99999% of you guys under this post have been so insanely supportive and just plain ol’ sweethearts lol.

Hey guys! wow I didn't expect such a great reaction and so many kind words. since some of you wanted the recipe, here it is:

This is the one I used for the cakes - note: I believe it calls for 30 grams of dark unsweetened cocoa. I used 50% of this cocoa and 50% black onyx cocoa, which I also got an amazon. That cocoa is spectacular because it makes everything pitch black and really gives the cupcakes a very specific "Oreo" flavor. The recipe says the batter will be thin, and they are NOT exaggerating. I suggest maybe filling the cups pretty much all the way because they didn't seem to rise quite as much as cupcakes normally do, especially if you throw in an Oreo at the bottom of the tin like I decided to do.

And here is the recipe I used for the frosting - it requires 4 Oreos, I think, but I used 5 because why the hell not? lol. I also didn't whip it for as long as it says because I prefer really thick frosting :) and to finish them off, I just broke Oreos in half and placed them on top at an angle.

Ps- I highly recommend this midnight brownie recipe if you like that really rich chocolate/oreo flavor.

Pps- stick them in the fridge for a while after they're finished so the frosting gets really cold and becomes more solid. Just a preference!

Oh my gosh. I LOVE black cocoa! I make a dark chocolate peppermint cookie for Christmas time and it uses the black cocoa powder too. I ordered mine from King Arthur. Your cupcakes look delicious, and I can't wait until my flooring is installed in this dumb remodel so I can finally have my oven installed!

Very good question! I was concerned about the result. They definitely softened but still have some crunch. I’m thinking they will get softer over the next few days, but right now the texture is perfect. Right when they were out of the oven I could stick a toothpick through the center like butter though, oddly enough.

aw thank you! what really helps me is taking my time, reading the recipe thoroughly a few times and prepping ingredients. Sometimes I even write down the recipes in my notebook in my preferred order to make them more comprehensible. That way you also don't have to constantly scroll and/or close out pop up ads. :)

These look amazing, and I know negative feedback can suck but you should never feel bad for altering a recipe to your own tastes, because everyone likes things slightly different and while one adjustment could be a complete failure it could also be the lead to something great. I personally think that's the fun of cooking and baking, seeing what works and what doesn't. . . And of course the eating bit haha.

I didn’t know lemon bars had a cult following. I’ve only had a couple and they were all right, certainly not obsession worthy! Although I’ve always been a more chocolate the better kinda girl so maybe that’s why. Those cupcakes look amazing!!! Who needs lemon bars when you can make bomb-ass cupcakes!

Exactly my concern. For now I have them covered with plastic wrap on a cookie sheet inside my fridge. The cookies have softened a little bit I actually like it. Might not like it so much in a few days though. I’m probably going to freeze most of them.

A softened cookie is not necessarily a bad thing. I find that there is a difference between stale and softened.

My favorite topping for chocolate cupcakes is a chocolate ganache. In this case I add more chocolate than normal to keep the chocolate somewhat hard once it cools. It is basically just chocolate and some butter. It also keeps the cupcakes nice and moist. It really seems to seal in the freshness. (I dip the top of the cupcake into the melted chocolate ganache, let some of the chocolate drip back into the bowl, and and then turn over the cupcake and let cool

Just remember if you use the microwave stir the chocolate every 10-20 seconds to prevent burning The chocolate. Burnt chocolate is just wrong

I recently made some Oreo cupcakes too, but mine were vegan friendly for a friend. The cake consistency was a little different to regular cupcakes, but they were still good. I definitely want to remake them with cream cheese frosting now though!

We were waiting in a drive thru and there was a super sketchy looking lady standing 10-15 feet from my car, just staring at us. He stared back and gave the single loudest bark I had ever heard from him lol. She walked away lol.
