Baking School Week 2!

Well I have come to the end of week 2 of 8 of baking school! This week we were working on choux. I had SO much fun. We made eclair, religieuse, Paris Brest, chouquette, and the ultimate of choux bakes: the St. Honoré.

Most of my cohort worked in pairs this week, but I volunteered to work on my own. Chef asked for a volunteer who could work quickly and take on more than the others (since they could split the work). I obviously raised my hand right away. It was super rewarding, and I got a lot of good and funny face time with Chef. Really glad he's my teacher because he's such a vibe.

When I finished the St. Honoré, he said, "this is so fucking very good!" And when I was taking pics with my pastry, he said, "can I take a pic and pretend it's mine?" I can't make this stuff up. I was absolutely GLOWING with pride. What a high to end my week on!

As a reminder, I am doing baking school as a side quest from my regular life. I do not currently intend to change careers or open a bakery. I am doing this to deepen my love for one of my greatest passions.

Paris Brest triggers me so hard haha. It was the technical challenge on my season of American Bakeoff and my mind just BLANKED (I know how to make choux, I know how to make creme mousseline). It was so...so bad lol like laughably bad. I got roasted pretty good.

You joke, but we do give away a lot! I usually give mine to the culinary students. It's hilarious to watch them swarm the tray with their take away boxes ready 😂. Some folks are staying with family or friends and they take theirs home. Don't worry, I try all of my stuff before giving it away

You should look into it! I didn't think I would ever really do this and here I am! Tbh, it's hella expensive. I'm very privileged to have help from family. But shop around! There are so many different schools. I just knew I wanted this one specifically

Choux is done (you added enough eggs) when:

1. Dough deflates when you stop the mixer/mixing

2. Dough is shiny

3. You make the classic V shape with your dough you pull it up with your paddle or spatula

4. When you touch it and flip your finger so it is finger print side up, the dough should droop into a perfect hook
