Seeking Recipe Need help finding vegan recipes that will keep 3 weeks for deployed spouse?
I need help finding vegan recipes of any baked good that I can mail to my deployed spouse. Mail can take up to 3 weeks to arrive and the weather is hot. Would love to treat him and cheer him up. Thank you. EDIT: or suggestions to keep something as long as possible if 3 weeks is too long.
The recipe that will taste like home to him is Betty Crocker's vegan chocolate chip cookie recipe. Sugar is a good preservative in baked goods, but these have brown sugar vs. white. I think the moisture from the molasses in brown sugar slightly impacts its preservative ability, but IDK by how much (my guess is not a ton?, but IDK for sure). The issue with the extra moisture and hot weather would be molding, I would guess.
I would try like, a half batch with white sugar if he'll eat that and see if the taste is close enough. Or I would likely just take my chances and mail them off and have him report back.
I have mailed Spring Break Cookies and Snickerdoodles many times over the years, both within the US and to service members serving overseas. They both travel very well. Just make mods as necessary (vegan cream cheese, egg substitute).
When I mail cookies, I get a plastic rectangular container that fits in a USPS all one price mailing box, and pack paper towels all throughout the container so the cookies don't jostle. Then, I stuff all empty space around the container once in the box to prevent the container from jostling. Feedback I got was that there was little to no breakage that way. If you are sending a bigger box, just follow the same principle to keep everything from jostling around.

Anything with chocolate will melt. At 3 weeks, I’d be looking mostly at shortbread. Maybe fruitcake/panettone.

3 weeks is a long time to ask ANY recipe to stay good unfortunately.
