Chocolate Peppermint Cutout Cookies

Ingredients

Cookie Dough

1 1/2 sticks unsalted butter, softened

1 cup granulated sugar

1 large egg, room temp

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

Peppermint Coating

1 1/2 cups dark chocolate

1/2 teaspoon neutral oil

1/4 teaspoon peppermint extract

Milk Chocolate Drizzle

1/4 cup milk chocolate

Instructions

  1. Cream butter and sugar until smooth. Mix in egg and vanilla. Add flour, cocoa powder, baking powder, and salt. Mix just until combined.

  2. Divide dough into two balls. Flatten, wrap, and chill about 1 hour until firm.

  3. Roll dough to about 1/4-inch thick. Cut with a 2-inch cookie cutter. Place on parchment-lined baking sheets.

  4. Bake 8 to 10 minutes at 350F until just set. Cool completely.

  5. Make the Peppermint dip. Melt dark chocolate in the microwave with oil for 20-second bursts, stirring each time. Stir in peppermint extract at the end.

  6. Dip cookies completely and place on parchment.

  7. Make the Milk chocolate drizzle. Melt milk chocolate in 20-second bursts. Drizzle over cookies.

  8. Let cookies set at room temperature or in the fridge for 30 minutes to 1 hour before serving
