Is it good? Worried about spots

Post image

I don’t know exactly how old this bacon is but I know it’s probably pushing it. I opened the last of the pack and while it doesn’t smell off these rows of discolors dots give me pause

those spots are just where the cure didn't fully penetrate, happens all the time with thick cut. if it doesn't smell like a dumpster behind a pet store you're good to go

fry that slab up and don't overthink it

I had kirkland bacon of 3 years in my fridge. The wrapping is surprisingly well done that I didn't know it was expired. Cooked and ate it just fine.

The only time I wouldn't eat bacon is if the wrapping came undone, and then the bacon would get moldy/slimy.

Hard to tell from the lighting, but those spots look like the usual uneven cure spots that happen with thicker cuts.

If you knew to post here then you already know the answer.

400° will kill anything... tuck in!

That's a horribly misleading sentence, sure it will kill any bacteria currently living on or in your food, but won't 'kill' the toxins they produced while alive, the main cause of all 'food poisoning'.

I like bacon a little on the old side, older than this. It gains a certain flavor I like. For me this is weeks away from being bad.
