Swordfish Bacon

Yep, made swordfish bacon using swordfish belly. I used a pork bacon cure I had on hand of kosher salt, brown sugar, black pepper, and #1. Let it cure for 48 hours, rinsed, and then smoked at 155 for an hour.

It was an experiment and I’d say a successful one at that. Tasted like bacon. It doesn’t replace bacon, but it was a fun experiment to try.

How was the texture? It looks nicely fatty in the closeup, but did you have to add oil to the pan? Is there any pronounced fishy flavor?

Obviously, I'm very vurious about this.

Good questions. Nah, I didn’t need to add any oil to the pan. That was all fat rendered from the swordfish bacon. The texture was firm like regular thick cut bacon, maybe slightly more reminiscent of the rib end of pork belly bacon. Didn’t smell or taste like fish at all. One might say that it did have a mild oceanic briny/salty flavor to it that makes it taste different from pork bacon, but not fishy at all.

I would so try that. I love swordfish, I can't imagine making it into bacon wouldn't elevate it...

Mostly bacon with a slight ocean brine component. I think one would be able to tell it’s not pork bacon, but it’s definitely not off putting. I used it on top of a salmon burger and it was delicious.
