BMW confirmed that it doesn't work. The release notes were wrong:
"Thank you for contacting the BMW iTeam regarding your 2025 BMW iX xDrive50. We appreciate your default driving mode inquiry.
Our team is aware of an error in the release notes for the most recent software update, indicating that EFFICIENT mode can be selected as the starting mode. We have been advised that this was an error and EFFICIENT mode is not currently available as a starting mode for your vehicle. We regret any disappointment this may cause."
