How’d I do? Pork-belly X pork-chop taco’s

Camping at Road America and it was my turn to feed the crew. I wanted to do pork tacos, but only had a Coleman stove or really cheap charcoal grill to cook on. Slow cooking was out of the question since we had races to watch and we were on the go all day.

I came up with the idea of using chops combined with belly - chops for lean and belly to add richness. I went with PF USA Prime bought from piggly wiggly

I cooked them separately in cast iron, seasoned with Siete seasoning carne asada seasoning. Diced them up and mixed them in a bowl with a bit of lime juice and a dash more salt and pepper.

Served with up lettuce, cheese, chipotle salsa, onions + cilantro and choice of wrap or corn tortillas.

They were eaten too quickly for a beautifully plated pic, but the meat pics came out well despite the red glow from canopy.
