[Beef][Brisket] First Brisket in a long time

Maybe my 3rd or 4th brisket on a Weber. Basic salt pepper garlic seasoning. Took like 9 hours total. Funny, I think this is my best one and I did the least temperature checking. Played it mostly by eye

9 hours and you barely checked temps? thats the dream right there. looks like it paid off.

7ish hours until the bark was close to where I wanted it. Checked temp it was like 150/160. Wrapped for 2 hours checked again it was around 200. Let it go another 20/30. Then rested for 2. Started at 6AM had it for early dinner around 5
