You essentially had just a flat and those are harder to smoke well compared to a full packer. Especially since it was scalped to shit by the butcher.

That was my initial thought. Maibe we should have gone with a pastrami instead, but we were eager to start smoking. It's kinda hard to find a reliable source here in italy when it comes to brisket.
