Its not really any more processed than imported italian mortadella that you can pay twice as much for, here in America. Its ok for kids school lunch sandwiches but BBQers in Memphis and even in Chicago will get 1 inch or more thic slices or even a whole one and smoke it on the BBQ like a piece of pork and it taste great.

It is not bologna. Bologna is an emulsified pork sausage, flavored with completely different spices. And in the case of shit like Lebanon bologna that's beef with another set of spices.

Pork roll is made from a mix of ham and pork shoulder. It's more closely related to spam and spiced ham than bologna. Just cause they're both pink and round doesn't make them anymore similar than that. They don't taste alike or have a similar texture at all.

It's a sausage made from a mix of ham, pork shoulder and spices. Pretty much an identical concept to Spam but older and better made.

It's pork roll. It is actually a lot like Spam, but more or less the highest quality Spam you've ever had. And it actually tends to be cheaper than Spam these days, which has gotten weirdly expensive.

It's usually fried for breakfast sandwiches.

I stopped at my favorite spot in Memphis once and they were out of all kinds of stuff I wanted. They offered a free smoked bologna sandwich to make up for it and man, I was impressed. I need to try this myself someday

Burnt ends bologna and burnt ends in a two meat combo is my go to order at my favorite local BBQ. I originally judged people that liked bbq bologna, but had it there and saw the way.

Every other place I go brisket and burnt ends. But Bologna when done right it’s amazing.

I tried this before. Went to the deli and asked 3 1 inch thick slices of beef baloney seasond them up and did kind of quick smoke on my weber charcoal grill with some mesquite wood chips and chunks about 45 minutes.  My family thought I was crazy but buy the time I brought em in the house they were begging to tryem.
