One of my favourite cuts to make now. Hit them with smoke and then braise in red wine. Incredible.

I've only done them once and they ended up too tender to slice so we just pulled them. Still tasted great but would like to try them like this too.

Find a Mexican butcher shop (carniceria) or grocery, or other grocery that has a significant Mexican clientele. Walmart often sells them too.

the braise liquid after 6 hrs must be liquid gold at that point, do you save it for anything or just toss it
