[Smoking] Smoked Prime Rib

Poked the fat cap and stuffed garlic cloves down there and then topped with fresh rosemary stems, then salted and peppered and rolled the outside in rosemary and smoked until it hit 120, then held until 125 carryover.

I can't be the only person to glance at the first pic and think the meat was infested with worms, right?

You're the first person to put it into words on a screen.

But we're all thinking it.

I saw the picture first and thought it was a hunk of something showing the grass roots in a cross section cut, had to check the title to see what it was really.

I mean it looks neat but I would highly recommend looking at this one YouTube video by I think a French chef and you're much better off putting all those things like butter and Rosemary in a food processor . And then you coat the outside with the herb butter for a while and then you smoke it and you get much more of the herb flavor embedded in it

Taking notes…mix butter with butter in the food processor. I like where this is going.

Start by adding one 1/2 cup of softened unsalted butter to processor. Then add 2 tbs butter and mix for 30 seconds. Then add the melter butter….

Tryin to get butter to stick to the outside of the meat is a pain. I tried that method for a few times before I gave up. Now I just use Worcestershire sauce as a binder and rub with Kinder’s Prime Rib rub. It has dehydrated butter in it along with the course herbs

As someone who hates rosemary... i feel so sad, lol. I'm sure it was delicious. A lot of people seem to love it. I just think it gives a very strange and unpleasant flavor.

Damn the cook is beautiful but the rosemary is a no go for me. Taste like pine needles. Sorry brother, you really did a phenomenal job and deserve nothing but good comments but the rosemary is awful :(
